Three friends and a small copper still called ‘Hannelore’, in a little shed in the backstreets of Kensington, are at the heart of Nubilum. Nubilum Distilling was born during the global lockdown in 2020. The isolation meant that the local community quickly became their new friends and family.

Nubilum means cloudy and in a way confused; a story still waiting to be told.

All over the world you’ll find distilled alcoholic beverages made from local ingredients; these unique spirits are traditionally made in small batches from the things around you, and Nubilum spirits are no different.

They use locally sourced ingredients and a blend of traditional and modern distilling methods, and are proud to call their very own spirits “Melbourne Made”.

They’re not just passionate about crafting exceptional spirits; they’re committed to doing it sustainably. Their approach to sustainability is rooted in local collaboration, waste reduction, and recycling initiatives that not only support the community but also respect our planet.
