La Sirène, where wild fermentation becomes an art form. Founded in 2010 by winemaker-turned-brewer Costa Nikias and his wife Eva, Australia’s original farmhouse-focused brewery has spent over a decade mastering the old-world saisons of Wallonia.From Champion Belgian and French Ale honours to a devoted following of serious connoisseurs, this is beer built on patience, place and season.
Beyond saisons, the brewery’s repertoire includes spontaneous coolship ales and a range of wine-hybrid wild ales born from Costa’s winemaking roots — beers described as bold yet delicate, unrestrained yet refined.
Tucked into a sawtooth-roofed warehouse in Reservoir, this is Australia’s original farmhouse-focused brewery, rebuilt from scratch in 2023 after more than a decade in Alphington.
